Rebecca Varidel is an ardent supporter of Australian produce and the young talent of our Australian hospitality industry.

She can still remember the superior taste of the produce from her Aunty Dossie’s NSW dairy farm – life changing flavours from when she was three. That walk-in pantry of home preserved fruits, home baked biscuits daily and the hand-beaten ice cream from fresh unprocessed farm cream, created a life-long love of cookery. “Nothing was bought except flour, sugar and tea.” This developed her commitment to the generosity of food that uses fresh local seasonal produce as its base. “I believe good food nourishes more than the body.”

Rebecca has worked as a Chef, in restaurants and then high end catering, as an artisan food producer and specialist food retailer. Her current project, taste and travel site InsideCuisine.com has an extensive readership and influence – and also showcases the best of Australian food to the world. With a large global food following on twitter, she is also an avid advocate of online communities.

“Accompanying the 2011 Electrolux Appetite for Excellence finalists on the produce tour of Queensland, was an amazing experience. The passion and commitment of the finalists to our industry was fantastic. Just as marvellous to witness was the camaraderie that developed in the next generation of emerging Aussie top talent. And I’m pleased to see past Electrolux Appetite for Excellence winners now representing Australia all over the world. I am proud to be an ambassador.”
