Biases on the Palate: 10am to 1:30pm
An exceptionally informative session which has been designed to teach participants how to identify biases in their palate. Hosted by Russell Smith, on behalf of Dairy Australia the session emphasizes how people ‘taste’ differently, which can also be applied to different food varieties. Perfect for both front and back of house professionals, we finish with a cheese tasting to identify what can be subtle differences between and under ripe, ripe and over ripe cheese.
Russell has a wealth of knowledge about cheese and sensory analysis. He has been the Deputy Chief Judge for the Australian Grand Dairy Awards; is responsible for running the sensory analysis program for dairy industry students; contributes to Regional Food Australia Magazine; and, has a regular regional food segment on ABC radio in Canberra.

Hosted by Dan Coward from Fine Wine Partners, this session will be looking at different wines and how varieties can differ.
